  • 1 block of firm tofu, pressed and cut into cubes
  • 2 leeks, cleaned and sliced into thin rounds
  • 1 tablespoon of chili garlic paste
  • 2 tablespoons of dark soy sauce
  • 1/2 cup of vegetable broth
  • 2 tablespoons of olive oil

Instructions

  1. Start by heating 1 tablespoon of olive oil in a large wok or frying pan over medium heat. Add the tofu cubes and cook until they are golden brown on all sides, about 10 minutes. Remove the tofu from the pan and set it aside.
  2. In the same pan, add the remaining olive oil. Add the sliced leeks and stir-fry until they are tender and slightly caramelized, about 5-7 minutes.
  3. Stir in the chili garlic paste and cook for another minute until the paste is fragrant.
  4. Add the dark soy sauce and vegetable broth to the pan. Bring the mixture to a simmer and cook for about 5 minutes until the sauce has slightly thickened.
  5. Return the tofu to the pan and toss to coat in the sauce. Cook for another 2-3 minutes until the tofu is heated through.
