Today I have a delicious Lentil Pecan Salad with Parsley Dressing recipe to share with you all – it’s sure to be a hit! Not only is this dish packed full of nutritious ingredients, but making it is also an opportunity for us to thank God for His amazing provision.

Lentil Pecan Salad

Ingredients:

  • 1 1/2 cups dried green or brown lentils, rinsed and drained
  • 4 cups water
  • 1 cup pecans, roughly chopped
  • 2 celery stalks, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley

Parsley Dressing:

Ingredients:

  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup lemon juice
  • 1/4 cup water
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine the lentils and water. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender but not mushy.
  2. While the lentils are cooking, prepare the parsley dressing by combining the chopped parsley, lemon juice, water, minced garlic, salt, and pepper in a small bowl. Whisk well to combine and set aside.
  3. Once the lentils are cooked, drain any excess water and transfer them to a large mixing bowl. Allow them to cool slightly.
  4. Add the chopped pecans, diced celery, and halved cherry tomatoes to the lentils, mixing gently to combine.
  5. Pour the parsley dressing over the lentil mixture and toss well to ensure that everything is evenly coated.
  6. Before serving, garnish the salad with the additional 1/4 cup of chopped fresh parsley.
