Nopalitos and Tomatillo Chipotle Stew

Recipe: Nopalitos and Tomatillo Chipotle Stew

Ingredients:

  • 2 cans (30 oz total) nopalitos, drained and rinsed
  • 1/4 teaspoon baking soda
  • 2 tablespoons water
  • 1/2 teaspoon ground cloves
  • 1 medium onion, chopped
  • 8 tomatillos, husked and chopped
  • 1 chipotle chile in adobo sauce, finely chopped
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions:

  • In a large pot, add the drained and rinsed nopalitos along with enough water to cover them. Stir in the baking soda.
  • Bring the nopalitos to a boil, then reduce heat and simmer for 20 minutes to remove their sliminess. Drain and set aside.
  • In a large pan over medium heat, add 2 tablespoons of water and the chopped onion. Sauté the onion until it’s translucent and tender, about 5 minutes. If needed, add more water, a tablespoon at a time, to prevent sticking.
  • Add the chopped tomatillos to the pan and cook for another 5 minutes, stirring occasionally, until they soften and release their juices.
  • Stir in the ground cloves and chopped chipotle chile, and cook for an additional 2 minutes, allowing the flavors to meld together.
  • Add the cooked nopalitos to the pan with the tomatillo mixture, stirring gently to combine. Season with salt and pepper to taste.
  • Simmer the stew for 10 minutes, allowing all the flavors to infuse into the nopalitos.
  • Serve the stew hot, garnished with chopped cilantro if desired.
