Recipe: Refried Bean and Veggie Delight

Ingredients:

  • 2 cups cooked refried beans (made without oil or animal products)
  • 1 cup grated carrots
  • 1 cup grated beets
  • 1/2 cup chopped onion
  • 1/2 cup chopped radish
  • 1/4 cup chopped cilantro
  • 2 cups shredded lettuce
  • 1 cup salsa (made without added sugars)
  • Salt and pepper to taste

Instructions:

  • Prepare all the ingredients by washing, peeling, grating, and chopping as needed.
  • In a large pan over medium heat, add 1/4 cup water and the chopped onion. Sauté the onion until it’s translucent and tender, about 5 minutes. If needed, add more water, a tablespoon at a time, to prevent sticking.
