Around the holidays, I love to enjoy delicious Sweet Potato Gnocchi. It is always a comforting dish that showcases the sweet and earthy flavor of sweet potatoes in an incredibly satisfying way. This recipe is inspired by one of my holiday favorite creations and has been adapted to fit within the requirements of the Daniel Fast. With just a few simple ingredients like sweet potatoes, whole wheat flour, sage leaves, and olive oil you can easily whip up this tasty treat. Plus, it’s easy to customize with your favorite toppings or sauces. Ingredients

  • 2 large sweet potatoes
  • 1.5-2 cups of whole wheat flour
  • Salt to taste
  • A handful of fresh sage leaves
  • 2 tablespoons of olive oil

Instructions

  1. Start by preheating your oven to 400°F (200°C). Pierce the sweet potatoes with a fork multiple times and place them on a baking sheet. Bake for about 45-60 minutes, or until soft.
  2. Once the sweet potatoes are cool enough to handle, peel off the skin and mash the flesh in a large bowl until smooth.
  3. Gradually add the whole wheat flour to the mashed sweet potato, stirring until a dough forms. You may not need all the flour, just add enough until the dough is no longer sticky.
  4. Divide the dough into 4 pieces. Roll each piece into a long rope, about 1 inch in diameter. Cut each rope into 1-inch pieces to form the gnocchi.
  5. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the top, about 2-3 minutes. Drain the cooked gnocchi.
  6. In a large skillet, heat the olive oil over medium heat. Add the sage leaves and cook until crispy. Add the cooked gnocchi to the skillet and sauté for a few minutes until lightly browned.

Helpful Tips & Serving Suggestions 

This Sweet Potato Gnocchi pairs wonderfully with a simple tomato sauce or a drizzle of olive oil and a sprinkle of nutritional yeast (if not strictly following the Daniel Fast). For a complete meal, serve with a side of steamed vegetables or a fresh green salad. Also delicious topped with a Fava Bean Ragout.
