- A handful of fresh cilantro, chopped
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Begin by draining and rinsing your soaked fava beans. Place them in a large pot, cover with water, and bring to a boil. Reduce the heat and let them simmer until tender, about 1 hour.
- While the beans are cooking, heat the olive oil in a pan over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
- Stir in the diced tomatoes and chipotle pepper, and let the mixture simmer for another 10 minutes.
